Sugar free pumpkin spice power muffins!

Pack these gems in your lunch for some pre WOD energy
 have as a snack or a quickie breakfast on the go!
Try warm with some coconut oil as a spread, yummmmmmmmmmmm....


Ingredients:

1 c. shredded zucchini
1 c. pure pumpkin puree
3/4 c egg whites
2 scoops vanilla protein powder
1/2 c stevia* 
3/4 c oat bran
1/4 tsp baking powder
1 tsp cinnamon
1 tsp nutmeg
1/2 c chopped walnuts
1/3 c chopped dried apricots

Method:
Mix all ingredients together well
Put in greased muffin tins or loaf pan if you prefer
Sprinkle the tops with cinnamon and stevia before they go in the oven

Bake at 350 for 35minutes
If you like them more well done, turn up to 375 for the last 5 minutes

Each muffin is 113 cal, 4 g fat, 14 g carbs, 11 g protein, 2 g sugar
( all the good stuff for FUEL for your WOD and keep you powered up)


* I use "IDEAL"  all natural sweetener: made from plants, 0 calories and tastes like sugar, hard to find-check your organic food store otherwise use a substitute like stevia or xylitol.
