Rustic tomato chicken

I went to the grocery store without a list or a plan and ended up creating "Rustic tomato chicken"!

( This picture doesn't do it justice....another to come later! Smells like a tuscan village in my kitchen when I woke to this creation this morning and tastes deliciously fresh and rustic!)

Ingredients:
2lbs chicken (breasts and boneless skinless thighs)
1 (16oz) can diced tomato, no salt
1 ( 8oz) can tomato paste, no salt
2 medium zucchinis, sliced
1 c. mushrooms, sliced
2 red peppers, sliced
1/2 cup sun dried tomatoes
1 tsp. dried basil leaves
1tsp oregano
1/2 tsp black pepper
1 tsp olive oil
1/4 c. fresh basil

Method:
All veggies were sliced and put in crock pot
Topped with tomato sauce and diced tomatoes
Chicken placed on top (for ease of shredding)
Cook on high for 4-5 hours or low for 8
Shred chicken with a fork at the very end and then stir it well!

I made some whole grain fussili pasta on the side for the man but this chicken is hearty 
enough to eat on its own or on a bed of spinach!
