Green Eggs and Ham!

I love my Frittata's!
Makes 6-8 servings
Ready for breakfasts or pack and take for lunch



Ingredients:
6 eggs
2 c. egg whites
200 grams of deli ham (sodium reduced)
3 green onions, diced
1/2 c. chopped cilantro
2 c. spinach chopped
1 tomato sliced on top
S&P

Add some low fat cheese on top if you want ( I am lactose intolerant all of a sudden...sob)


Method: Mix all together in a giant bowl
Grease a large casserole dish
Pour in 
Place sliced tomatoes on top
Bake at 375 for 45-60 minutes or until slightly brown on top



I top with some salsa and 1/2 an avocado for a complete power meal!
