Slow Cooker Turkey Chili

The greatest thing about chili is you can put whatever you want in it. I like to load it up with as many veggies as possible and this crock pot version will fill the house with that cozy, comforting smell of hearty chill!

Slow Cooker Turkey Chili

Ingredients

1 clove minced garlic
1 bunch of green onions
2 carrots
1 (15oz.) can of salt free tomatoes, diced or whole
1 (6oz.) can of tomato paste
2 Zucchinis
2 Red bell peppers
 1 Green pepper
2 cups salt free chicken broth
1/4 cup cilantro
2 tbsp chili powder
1/2 tsp cumin
1/2 tsp pepper
1/2 tsp paprika
2 (15oz) cans kidney beans
1(15oz) can chickpeas
1 cup frozen corn
1lb extra lean ground turkey



You can use as much or as little of these ingredients as you like, or use whatever is in your fridge.
My version is a veggie party and everyone is invited!


Method: Cook turkey, onion and garlic first in a large sauce pan. Just until the pink is removed. Add to crock pot and then add the remaining ingredients.

4-6 hours on low depending on how much you put in.
 I put this one on low for 4 hours but then left it out to sit over night with the temperature off. 
It is perfect!
With a large batch like this ( makes about 10 servings) you can freeze half of it and eat half for lunches this week. Or be a doll and bring a friend a nice cup of chill to warm up their day!


Top with some cheese, sour cream or enjoy with some toast!
