Another crock pot wonder, so quick this really saved me this week as I'm swamped with exams!
Took 5 minutes to prep and the crock did the rest!
Ingredients:
1c brown rice
2 c chicken broth
2 green peppers
1 cup frozen corn
1 can black beans
1 15 oz can diced tomato
1 can mild green chills
1/2 cup cilantro
1 tsp cumin
1tsp paprika
1 tsp onion powder
5 chicken breasts
(put on last to shred at the end)
Put all ingredients in pot, chicken on top and cook on low for 8 hours.
Shred chicken at the end , stir in and enjoy!
