I love breakfast any time of day, so for my weekly food prep I wanted to try a frittata in the slow cooker for dinners this week. It worked out great and took zero work at all.
Ingredients:
1Tbsp olive oil
1/2c diced onion
1 clove garlic diced
1 cup low fat cheese
4 eggs
1 cup egg whites
2Tbsp milk
1 cup spinach-tails off
1 tomato diced
1 green pepper, diced
salt and pepper to taste
Method:
Sautee oil and onions until tender in saucepan
add to crock pot first
In a side bowl, mix all other ingredients and whisk well
add to pot, set on low for 2.5 hours
Voila!
Prepped once for dinner all week! Check out the spicy chicken I made for lunches too!
I will enjoy this with some salsa and avacado and maybe a side salad.
makes 6-8 servings
100 cal, 3 g fat, 2 g carb, 15 g protein
