This weekends Friday night feast consisted of chicken nuggets , breaded baked zucchini sticks
("zoo sticks") with marinara sauce and of course, baked yam fries.
Chicken Nuggets
Ingredients
16oz. chicken, cut into small bites
S&P, few dashes
2tsp olive oil
6tbsp breadcrumbs (I used organic spelt and kamut)
2tbsp panko (I used gluten free panko)
2tbsp Parmesan cheese (light)
Method
Spray cookie sheet and preheat oven to 425degrees
In one bowl:combine olive oil, breadcrumbs, panko and cheese and then put into a large ziplock
Combine chicken and shake up until covered evenly
Bake 8-10 minutes, until they start to turn golden, turn over and bake for 5 minutes more
Makes 4 servings
164 cal, 5 g fat, 22g protein, 8g carb
Ingredients
3 medium zucchinis, sliced into 1/2" x 3 " slices
1/4cup egg whites
1/3cup bread crumbs (I used organic spelt and kamut)
2tsp grated Parmesan (light)
1/4tsp garlic powder
Method
Mix egg with S&P in one bowl and combine dry mix into a large ziplock
Coat zucchinis by dipping into bowl and then covering with dry mixture
(only do a few at a time for even coverage)
Put on a greased cookie sheet and bake for 20-25 minutes or desired crispiness!
Makes 3 servings
120 cal, 2.5g fat, 21g carb, 7g protein
Serve with a marinara sauce
(I bought an organic sauce as I didn't feel like making one)
