I have made them in a pyrex dish before and cut into pieces, mini muffin tins or in these loaf tins as you see below- and they are all great! I pack a couple squares in a zip lock and take as an afternoon snack. Heated and enjoyed with greek yogurt or ice cream- they are JUST like pumpkin pie, but without the guilt!
Ingredients:
1/4c. xylitol
1/4c. stevia
1/4c. unsweetened applesauce
2.5tsp cinnamon
1.5 tsp ground clove
1tsp baking powder
1tsp baking soda
1/2 tsp salt
2tsp vanilla extract
4 egg whites
1- 15oz. can of pure pumpkin puree
2 cups oat flour
2 scoops vanilla whey powder
1/2cup Almond milk
1/2 cup chopped walnuts
Mix all ingredients together in a large bowl until smooth.
Put into dish of choice and bake at 350degrees for 30minutes.
Makes 24 squares if put in a pyrex dish ( 9x13) or mini muffin tins.
Each square: 63cals, 2.3g fat, 8g carbs, 5g protein
My favourite is to have with a chai tea or a cinnamon latte for a seemingly indulgent afternoon treat!
