Protein Power Muffins


I love muffins and these little gems are a perfect snack to take on the go to keep you energized!
Ingredients:
8 egg whites
1 cup quaker oats
1/2 cup unsweetened apple sauce
1 scoop vanilla whey powder
1 cup blueberries
2 tsp. baking powder
1 tbsp vanilla extract
1/4 cup chopped walnuts or pecans
1 pinch salt

Method:
Preheat oven to 350 degrees. Beat the egg whites, add applesauce, cottage cheese whey powder and then oats and remaining ingredients( nuts and berries last). Mix until smooth consistency.

Put into muffin tins( regular size or mini). Optional: Sprinkle with oats, cinnamon and sliced strawberries. Bake for 18-20 mins
The muffins should be golden on top, so watch them near the end as they may require more time.

If using regular size muffin tins: 100cal, 2.5gFat, 12g Protein, 9g carbs per muffin
