I made a goal this week to leave my car at home and ride my bike instead. I knew my week was packed tight with group meetings and assignments so my gym sessions were in jeopardy-so at least I could get the legs powered up with a power ride to class. I made it through the cold mornings, up a giant hill and through one day of rain... but this morning I was sore, my calves were aching, quads tight, and I wanted to drive. NO no, I couldn't give up, it is Friday! Almost there..so I knew I just needed a little push and thought a power breakfast was in order.
Chocolate Power Pancakes
Ingredients:
1/4 c quick oats
1/2 c egg whites
1/2 scoop chocolate protein powder
1Tbsp unsweetened cocoa powder
1 package stevia
Method:
Put all ingredients in a magic bullet, blend and then cook on hot pan!
For the topping I used frozen strawberries and heated them in the microwave for 45 seconds, covered in cinnamon. I put a little coconut oil on the pancakes and then covered in the strawberries. SO GOOD!
These take little effort and can be packed to go-just cover in almond butter or natural peanut butter instead and you have a commute friendly breakfast!
190 calories, 2.25g Fat, 16 g Carbs, 26g Protein
*you need a mini frying pan to make small ones, otherwise expect to make 1 giant pancake that takes up the whole frying pan as it doesn't have the thick batter consistency like regular pancakes
For an extra boost (which I really needed today):
Green smoothie
1 scoop matcha powder
1 scoop greens mix
1 tbsp chia seeds
1/4 cup raspberries
1 cup water & 3 ice cubes
This powered me up and got my butt up the hill to school!
