Crock pot balsamic chicken

If you do not have a crock pot...get one! This magical kitchen tool will keep you prepared and eating clean with minimal effort.

All recipes I post for slow cookers-could be done in the oven, but are no where near as juicy and flavourful!


Pre-cook...all the prepared veggies and herbs getting to know each other

After 4 hours 

Prepared meals for the week with just one cook!

Ingredients:

5 chicken breasts, cut into cubes if you prefer or left as breasts
1 medium onion, sliced
1 cup diced celery
1 can diced tomatoes, no salt
1 cup mushrooms
1/2 cup balsamic vinegar
1 tbsp olive oil
1 tsp oregano
1tsp basil
salt and pepper to taste

cut all veggies, throw it in the pot and come back 4 hours later!

I made a pot of brown rice on the side and then portioned 1/2 cup of rice and 1 cup of balsamic chicken medley for lunches this week! Now I am prepared and don't have to worry about it.

250 cals, 30 g protein, 3 g fat, 5 g fat ( w/out rice)
