Cauliflower crust pizza (Gluten free)

Sunday dinner was a success to say the least....
I have been curious about this recipe forever and finally put it to the test last night.
The crust has only 50cal, 5g carbs , 5 g protein per slice.


For toppings on this one we used zucchini, red peppers, onion, tomatoes and chicken.

Toppings:extra lean capicollo, green pepper and mushroom. YUM!

These little pizzas were delicious and they got the boyfriend stamp of approval too!
Ingredients:
1/2 head of cauliflower
1 clove of garlic
1c. skim mozzarella
1 egg beaten
1 tsp. basil
1 tsp oregano

Method:
Preheat oven to 400degrees - prepare a greased cookie sheet
Remove stems and chop cauliflower into chunks -put in food processor (or a blender with these capabilities such as a Vitamix)
The cauliflower should look like white rice
Add to a saucepan and cook 6 mins or until translucent
combine all ingredients in a bowl until dough
Spread onto parchment paper and bake 25-30 mins (until golden)
Take out and add toppings, then broil on high for 5 mins
cool 3-4 mins and enjoy!
* Don't go heavy with toppings, they will be more delicate than traditional crusts
